If you aren't sure what I'm talking about, let me send you back to 2001-2002. I was in Primary School and we were getting a visit from Yumion the Onion in the library and they read the book of how Yumion came to be. Yumion is a Vidalia onion like the ones we sell straight from Vidalia. He is pulled up by the farmer and he rushes off to tell the world about how sweet a vidalia onion is!
Did he lie? No!
So, I had a Vidalia onion that we didn't eat and it began growing shoots up the center. I didn't want to break it up and risk it breaking so I planted the entire onion just as it was! This past week I was hesitant to pull it up, oh but I wanted it so bad! I decided that I'd risk it! I was so curious as to what it looked like under the ground. Was it a big massive onion like yumion? Was it wearing overalls too?
It took some digging, but I finally got it up. Six small onions were all still connected but growing beautifully! I took them inside and washed them up to prep them for supper.

For supper, I decided on steak, mashed potatoes, and sauteed mushrooms & onions. Yumion didn't tell a lie! That was the sweetest onions we had ever had!
The Farmer thought I had put sugar in with the onions because of how sweet they were! I saved the green shoots too! I threw a few in with the onions and mushrooms. The rest I chopped, put in a ziploc bag, and put in the freezer. They will be good for soups, stir fry, or just adding a little extra flavor to any dish. Another way you can use the green shoots is by dehydrating them and grinding them into a green onion powder. Yum!
I will have to give y'all a look into the Yumion books one day! I bought a couple for the boys a while back for them to enjoy at the farmer's market when they're a little older.

Steak - Denver Steaks seasoned with "Chophouse Steak" Seasoning
Mashed Potatoes - Box Mix (Shhh, don't tell!) Seasoned with Everglades seasoning, salt, & pepper
Mushrooms and Onions - I placed butter in the pan once the steaks were done and sauteed them in the steak juice and seasonings.
