This past week was just that, a week.
We deep cleaned the house to keep ourselves busy. When I say we deep cleaned, I mean that at one point I looked around myself and I was surrounded by everything from my pantry. Pure chaos at its best.
The Farmer said, "Sorry we made more of a mess than before." I just smirked and replied, "It has to get worse before it gets better, right?"
In the midst of the chaos I decided to throw together some goodies. Because In the middle of chaos, why not do one simple thing to bring you joy until the chaos is over? Also, with a nap and a muffin the house was cleaned fully within two hours. lol!!
Ingredients
1 ½ cup all-purpose flour
1 cup blueberries, fresh or frozen
1/2 cup sugar
1/2 cup milk
1/3 cup vegetable oil
2 lemons, zest
1 egg
1 ½ tsp baking powder
1/8 tsp fine salt
Instructions
Preheat the oven to 450 F°.
Grease muffin pan with butter.
In a mixing bowl, combine the flour with the baking powder, salt, sugar and lemon zest. Mix them together with a whisk.
In a bowl, combine the oil, the egg and the milk and mix well.
Pour the wet ingredients into the dry and mix with a fork, just until combined.
Toss the blueberries in a very small amount of flour(1 teaspoon), and using a spatula gently fold them into the batter.
Divide the batter evenly between the muffin cases and bake for 5 minutes at 450F°, then reduce the oven temperature at 400F°/200C° and bake for a further 20 minutes, or until the muffins are golden on top and a toothpick inserted into a muffin comes out clean.
Place muffin tin on a cooling rack to cool and serve them dusted with powdered sugar if you like.
