Normally for birthdays, I do my chocolate cake, it's popular with all the chocolate cake lovers. But every year at the same time, for the same birthday I have to get creative.
My husband HATES cake. I know he is a bit strange. So every year I have to get creative, pizza and ice cream, ice cream cake, popcorn, just about anything to avoid cake. This year was no exception.
I thought and thought about what I could do and finally I decided on "A Cornbread Cake". I don't know if that's the actual name but it seems legit.
Here's how I made it:
You'll Need:
Two boxes of jiffy cornbread
Boxed Mashed potatoes (You can make your own, but I like to be lazy sometimes.)
A good gravy recipe
Chicken tenders or fried chicken
Here's how you put it together:
1. Make both boxes of jiffy cornbread seperately and put one batter in a round cake pan and the other batter in another round cake pan. Bake according to the box. (TIMES WILL VARY SO KEEP AN EYE ON IT, when it turns a golden color, check it with a toothpick.) Set aside to cool once done.
2. Next, work on your mashed potatoes. Cook according to box. I like to dress my box potatoes up A LOT. Like I'm talking garlic powder, parsley, chives, sour cream, soul food seasoning, seasoning salt, pepper, butter, and anything else that seems like it'd taste good in them.
3. Once your cornbread is cooled, spread the mashed potatoes onto the cornbread just like its cake icing. I used cake decorating tools to make the mashed potato icing look more like one of those naked cakes.
4. Throw your chicken tenders into the oven and cook them.
5. While they're cooking, make gravy. My homemade gravy recipe (See photo below) is the one I always go to for any kind of brown gravy recipe. Ugh! It's amazing!
6. Once the gravy and chicken is finished, pour the gravy slowly on top of the cake and top with chicken.
7. SERVE & ENJOY!
This recipe was so delicious and fills you up quite fast. It's perfect for weeknight suppers, birthdays, and any occasions!
