Scratch Recipe Project: Thanksgiving Apple Pie.

Hi friends!

Thanksgiving is coming up quickly

and I love y'all. I want y'all to get out of that "just bring the napkins" rut and get promoted to the official adult table.

So here's how we are going to get you to the adult table.. I'm going to give you my secret recipe for my Thanksgiving Apple Pie and you're going to share this, comment on it, and send it to all your friends. I have big confidence in this recipe and YOU.


FLAVOR NOTES: This pie has sweet caramel-like flavors and they blend perfectly with a hint of salt and sweet cinnamon apple flavors.

The Crust:

2 ½ cups all-purpose flour

1 teaspoon kosher salt or use 1/2 teaspoon fine sea salt

1 TBsp sugar, optional

1 cup very cold unsalted butter, cut into cubes (2 sticks)

7 to 10 tablespoons cold water


  1. Add 1 ½ cups flour, salt, and sugar to a medium bowl. Stir until combined.

  2. Put butter cubes in flour and mix briefly with a fork to coat the butter with flour.

  3. Cut the butter into the flour with a fork, working the mixture until the flour has a coarse, mealy texture like bread crumbs.

  4. Add the remaining 1 cup of flour. Work butter and flour with the fork until flour is evenly distributed. (Dough should be crumbly with pea-sized pieces).

  5. Sprinkle cold water in the mixture then add 6-7 tablespoons and add from there. Using a spoon, press the dough into itself. The crumbs should begin to form larger clusters. If you pinch some of the dough and it holds together, it’s ready. If the dough falls apart, add more water by the tablespoons.

  6. Place the dough on a clean surface. Work the dough just enough to form a ball. Cut the ball in half then form each half into disks. This will be your top and bottom crusts. Wrap each disk with plastic wrap and refrigerate at least 30 minutes.


The Filling:

1/2 cup unsalted butter

3 TBsp all-purpose flour

1/2 cup white sugar

1/2 cup packed brown sugar

1/4 cup water

4 Granny Smith apples - peeled, cored and cubed

1 TBsp Cinnamon


Melt butter in a saucepan. Stir in flour to form a paste. Add sugars and water; bring to a boil.

Reduce temperature, and simmer for 5 minutes.

Meanwhile, place the bottom crust in your pan. Coat apples with cinnamon. Fill until mounded slightly. Pour the butter mixture over the apples, then mix together. Cover with a lattice work of crust.

Bake 35 minutes at 400 until the top is golden brown. Also, you can make an egg-wash mixture to go on top. I used a little bit of milk and one egg beaten together then brushed it on top with a pastry brush.
