Scratch Recipe Project : Southern Gumbo


It's been a while since I baked or cooked from scratch. When the boys were born it was simply just easier to go grab something quick and easy. But while dusting the house yesterday I found an old cookbook I bought while in the mountains called, "Old Timey Recipes". It has recipes going back to the 1880s, the thought that these recipes have been passed down through generations and generations and have seen so many people go through so much inspired me and I decided to revive my "Scratch Recipe Project" and so I tried this Gumbo Recipe that was in it.


Southern Gumbo

Cut up 2 young chickens (I used ground beef & browned/drained it) and fry in a skillet; when brown put in a pot with one quart finely chopped okra, four large tomatoes, and 2 chopped onions. Salt + Pepper. Cover with boiling water. Simmer, covered for 3 hours. Serve with boiled rice (I made 9 servings which is enough to feed the neighborhood).


This recipe could definitely stretch if you have a large family and one bowl is enough to really fill you up. I also added a ton of cajun seasoning which just enhanced the flavors already there and made me feel even more country than we already are. Ha! If you try this, let me know what you think!
