Pancake Days!


Mornings are meant for quiet time, coffee and pancakes! In our home, pancakes are a serious thing. They're my favorite "Day Off" breakfast. I get up really early in the morning and begin making them before the farmer wakes up. The smell of freshly made pancakes fill the entire house and then comes the smell of warm syrup flowing over them. Okay, now I'm making myself hungry! When you live on a farm and love pancakes as much as I do, sure you could drive to the nearest Dollar General and pick up a box of Bisquick, but where is the fun in that? You know me, I can find a homemade recipe for anything that I want to eat! Here's my recipe:

  • 1 1/2 Cups All-Purpose Flour

  • 3 1/2 Teaspoons Baking Powder

  • 1 Teaspoon Vanilla Extract

  • 1 Egg

  • 1 1/4 Cups Milk

  • 3 Tablespoons Melted Butter

Instructions 1. Sift dry ingredients together.  2. Add the egg. 3. Melt the butter. 4. Add butter to milk and vanilla.  5. Whisk dry & wet ingredients together. 6. Pour 1/4 cup batter at a time into greased, hot skillet. 7. Brown pancakes on both sides. 8. Add your favorite toppings (raspberries, blueberries, chocolate chips, etc.) and enjoy!

Now you have to publish a cookbook! I have so many recipes I have saved from my family! I want to do a book too of family recipes!
