The Best Homemade Cheese Ravioli



Awhile back I did a thing called, "The Scratch Food Project". It was a collection of homemade, from scratch recipes I did while learning to cook. It was so much fun and I learned so much. This homemade ravioli was by far my favorite scratch recipe!



The Best Homemade Cheese Ravioli

Ingredients


Include everything your reader needs to make this recipe perfectly, with measurements, optional additions, or alternatives. For example:


FOR PASTA:

  • 2 cups all purpose flour

  • 1/2 tsp. salt

  • 2 eggs

  • 1/4 cup water

  • 1 tablespoon olive oil

FOR FILLING:

  • 3/4 cup ricotta cheese

  • 1/4 cup parmesan cheese

  • 1/4 cup mozzarella cheese


How to make this goodness:

  1. In a medium bowl, mix the flour & salt. Make a well in the center of the flour mixture. Add eggs, water, & oil to well; mix thoroughly. If dough is too dry, add water. If dough is too sticky, add flour while kneading)

  2. Gather dough into a ball and knead on a lightly floured surface 5-10 minutes until smooth. Wrap in plastic wrap or foil, let sit 15 minutes.

  3. Divide dough into four parts. On a lightly floured surface, roll one-fourth of the dough at a time. Keep remaining dough covered with a damp towel. Roll the dough into a rectangle around 1/8 in. thick. Trim dough into 4 (14x4in) rectangles Cover with damp towel until ready to fill.

  4. In medium bowl, mix filling ingredients until well blended. On 1 dough rectangle, place 10 mounds of filling (around 1 tablespoon each) about 1 1/2 inches apart in 2 rows. Moisten dough lightly around mounds with water; top with second rectangle of dough, lining up the edges. Press gently around the edges to seal.

  5. Cut between mounds using a pizza cutter, into 10 squares. Trim any excess pasta and reseal if needed. I sealed my edges with a fork.

  6. In a stockpot, heat 4 quarts of water to boiling, add in the ravioli. Boil uncovered 7-10 minutes, stirring occasionally until tender. (They will rise to the top) Remove ravioli with large slotted spoon and place in colander to drain.Don't rinse! Don't dump ravioli into colander either or else it make break open.

  7. Serve with your favorite pasta sauce and done!
